Ginger Glazed Beets and Onions

Ingredients:

2 pounds beets - any variety or a mix

1 large sweet cooking onions

1 teaspoon ginger powder (or use fresh grated ginger if you have it)

Juice of 1 lemon

1/4 cup agave syrup

Preparation:

Steam or bake beets and remove skins.  Cut into bite sized pieces.

Slice onion into half moons.

Mix lemon juice, agave syrup, and ginger and mix this into the beets and onions.

Bake in a glass baking dish until the beets and onions are glazed.  About 30 minutes.

Using a variety of beets (Albino, Touchstone Gold, Cylindra, Chioggia, and Detroit Red) will give you a lovely jewel colored dish.  This dish is good hot or cold and will be a perfect fall dish and will look great on a Thanksgiving table.  Plan ahead and buy enough beets to store for those cold winter months!
