1 cup dry coconut
1 cup sesame seeds
1/4 cup cumin seeds
4-5 teaspoon caraway seeds (black cumin seeds)4-5 Bay leaves
2 teaspoon hing
2-3 sticks of cinnamon
5 cloves
4 black cardamom
3 dry red chilies
1 teaspoon turmeric powder & salt to taste Roast coriander seeds, dry coconut and sesame seeds each one separate. I do this in the microwave. Roast next 7 ingredients in the pan on 1tbspoon of oil. Cool and then using blender and coffee grinder grind it. Then add turmeric powder and salt. This recipe makes spice enough for 6-8 months of everyday use.
Sweet Indian Spice Mix
This makes a lot so you may want to cut the recipe down to a half or a quarter of the suggested amounts. This is Rekha's family recipe for the sweet spice called for in the Lentil Soup recipe.
